In a highball glass, churn together 25ml sugar syrup and the juice of 1 lime, with a small handful of fresh Guernsey mint. Add 50ml white or light rum and a few cubes of ice and stir/churn for 15-20 seconds. Fill the glass with ice, top with soda and garnish with a sprig of mint.
